Easy Healthy Meals

For breakfast, I cooked 3 eggs with a little olive oil, then added shredded sharp cheddar cheese and covered until the cheese melted. On whole grain toast, I mashed half avocado, added a handful of arugula, topped it with the eggs & cheese and added a spicy chili sauce.

After breakfast I take all my supplements since the fat from food increases absorption. I take a multivitamin, omega 3, vitamin D, iron and cognitive support every morning.

Lunch was a meat bowl and ate that with romaine lettuce. I cooked some ground beef in a little avocado oil, then added taco seasoning. While that cooked, I diced cucumbers, tomatoes, and red onion. When the meat was ready, I added that as the base in a bowl, topped with the diced veggies and added jalapenos and pickles. The sauce was 1/3 cup Greek yogurt, 2 tbsp ketchup, 2 tbsp pickle juice. Drizzle on top and enjoy! I ate mine with lettuce hearts.

On Mondays I typically make salmon. I chopped some broccoli and sweetpotato. Drizzled some olive oil, salt and Italian seasoning. Roast at 375F for about 20 minutes or until fork tender. For the salmon, spread some Dijon mustard and season with your favorite seasoning. I added some paprika and steak seasoning. Add to the oven and bake for 15 minutes until the salmon flakes with a fork.

After dinner I make myself a peppermint tea and do my nightly 10 minute red light mask.
