🧾 Ingredients

Cookie Dough

• Rajgira Flour – 80 g (½ cup)
• Custard Powder – 20 g (2 tbsp)
• Milk Powder – 1 tbsp (10 g)
• Jaggery Powder – 50 g (¼ cup)
• Unsalted Butter / Ghee – 45 g (3 tbsp)
• Milk – 15 ml (1 tbsp)
• Vanilla Powder – ¼ tsp
• Cardamom Powder – ¼ tsp
• Baking Powder – ¼ tsp
• Baking Soda – ⅛ tsp
• Salt – a pinch

Batter Coating

• Custard Powder – 2 tbsp
• Milk – 4 tsp
• Water – 4 tsp

Outer Coating

• Desiccated Coconut – 4 tbsp

👨‍🍳 Instructions

Step 1 – Prepare Dry Ingredients

In a bowl mix:
Rajgira flour, custard powder, milk powder, baking powder, baking soda, cardamom powder and salt.

Set aside.

Step 2 – Prepare Butter Mixture

In another bowl add:
Butter (or ghee), jaggery powder and milk.

Mix well until the jaggery dissolves and the mixture becomes smooth.

Step 3 – Make Cookie Dough

Add the dry ingredients to the butter mixture.

Mix gently and form a smooth soft dough.

Rest the dough for 10 minutes.

Step 4 – Prepare Batter

In a small bowl mix:
Custard powder, milk and water to make a thin batter.

Step 5 – Shape Cookies

• Divide dough into 20 g balls.
• Dip each ball into the batter.
• Roll in desiccated coconut.
• Slightly flatten the cookies.

Step 6 – Bake

Place cookies on a lined baking tray.

Bake in a preheated oven at 160°C for 20-25 minutes.

Allow cookies to cool completely to become crunchy.
