Tilapia Fish Bowl with Lemon Coriander Rice and Avocado Mango Salsa😍🐟
Recipe :
* Take tilapia fish fillets and pat them dry with a kitchen roll. Marinate with salt, chilli powder, black pepper, garlic powder, paprika, cumin powder, and a little oil. Coat the fillets well and keep them aside for 15–20 mins.
* Heat a pan and drizzle some oil. Add the marinated fish fillets and cook them well from both sides until nicely golden. Once cooked, remove them from the pan and cut into big chunks.
* In another pan, add a little oil and 1 tbsp butter, then add cooked rice (about 1 cup) and mix well. Season with salt, black pepper, ½ tsp garlic powder, chopped coriander, and juice of ½ lemon. Toss everything together and keep it aside.
* For the avocado mango salsa, in a bowl add 2 chopped green onions, ½ avocado (chopped), ½ mango (chopped), chopped coriander, salt, black pepper, and chilli powder. Mix gently.
* To assemble the bowl, start with the lemon garlic rice, add the tilapia fish chunks, some chopped purple cabbage, and finish with the mango avocado salsa on top. Serve fresh.
