Creamy Chickpea Paneer Salad – High Protein, Full of Flavor

Ingredients:

For the sautéed chickpeas:
* 1 tsp ghee
* 1/2 cup boiled chickpeas
* Salt to taste
* 1/4 tsp red chilli powder
* 1/4 tsp turmeric powder
* 1/2 tsp oregano

For the dressing:
* 50g paneer
* 2 tbsp curd
* A handful of fresh coriander leaves
* Salt to taste
* 1/4 tsp black pepper
* 1 tsp lemon juice

For the salad:
* 1/2 cucumber, chopped
* 1/2 carrot, chopped
* 1 small tomato, chopped
* Cooked chickpeas (from above)
* Creamy dressing (from above)

Instructions:
1. Heat ghee in a pan. Add the boiled chickpeas and sauté well.
2. Add salt, red chilli powder, turmeric, and oregano. Cook for a couple of minutes and turn off the heat.
3. In a blender, add paneer, curd, coriander, salt, black pepper, and lemon juice. Blend into a smooth creamy dressing.
4. In a bowl, add chopped cucumber, carrot, tomato, and the sautéed chickpeas.
5. Pour the creamy dressing on top and mix everything well.
6. Serve fresh and enjoy a bowl full of taste and nutrition.
