Ingredients
2 medium sweet potatoes (boiled, peeled, and cubed)

1 medium cucumber (finely chopped) and ½ cup pomegranate pearls (anar)

2 tbsp roasted almonds, walnut + 1 tbsp pumpkin seeds & flax seeds

Spices:
Red chilli Powder
Salt
Black pepper powder
Chilli Flakes

1 tbsp Lemon juice and 2 btsp Tamrind water

Fresh coriander leaves chopped

Simple Steps
Prep the Potato: If you like a bit of texture, lightly pan-fry the boiled sweet potato cubes with a drop of oil until the edges are golden.

The Mix: In a large bowl, toss the sweet potatoes, cucumber, and pomegranate together.

Seasoning: Sprinkle the red chilli powder, salt, black pepper powder and chilli flax. Pour tamrind water and freshly chopped green coriander. Squeeze the lemon juice over it and give it a gentle mix.

Add your nuts and seeds right at the end so they stay crispy.

Serve: Garnish with fresh coriander and enjoy immediately.
