Ingredients:
Ragda banane ke liye:
Sookhe safed matar (Dried white peas): 1 cup (Raat bhar bhigoye hue)
Haldi: 1/2 tsp
Namak: Swad anusar
Pani: 3 cups
Baking soda: Ek chutki (Optional, matar jaldi galane ke liye)
Chaat assemble karne ke liye:
Aloo Tikki (Ya uble hue aloo)
Hari chutney (Teekhi wali)
Meethi imli ki chutney
Dahi (Fenta hua)
Barik kata hua pyaz aur tamatar
Barik sev
Hara dhaniya
Masala: Chaat masala, bhuna jeera powder, aur kashmiri lal mirch powder.
Instructions:
Ragda Banaye: Bhigoye hue matar ko pressure cooker mein pani, haldi, aur namak ke saath dalen. 4-5 seeti aane tak pakaen jab tak matar bilkul naram na ho jayein. Matar thode mashy (ghule hue) hone chahiye.
Tadka (Optional): Agar extra swad chahiye, toh ek kadhai mein thoda tel garam karke adrak-lehsun ka paste aur hari mirch bhun kar paka hua ragda usme mix kar dein.
Assemble Karein: Ek plate mein 2 aloo tikki rakhen, uske upar garama-garam ragda dalen.
Toppings: Ab upar se dahi, teekhi hari chutney, aur dher saari meethi imli chutney dalen.
Garnish: Kata hua pyaz, tamatar, hara dhaniya, aur barik sev se decorate karein. Ant mein thoda chaat masala aur jeera powder sprinkle karein.
