Today I’m sharing a healthy, colorful, and delicious Paneer Stuffed Beetroot Cutlet served with a refreshing mint dip. These cutlets are crispy on the outside, soft and flavorful on the inside, and packed with the goodness of beetroot, paneer, and simple spices.

This recipe is perfect for kids’ lunchbox, evening snacks, or even as a healthy party starter. The vibrant color of beetroot makes it attractive for kids, while the paneer stuffing adds a rich and tasty twist.

Ingredients: ✨
Chopped beet root 1 cup
Chopped carrot 1 cup
Boiled and mashed potato 3 medium
Peanut 1/4 cup
Fresh green peas 1/4 cup
Chopped tomato 1 large
Oil 3 tbsp
panch phoron 1 tsp
ginger-green chilli paste 1 tbsp
Salt to taste
Sugar 1 tbsp
Bhaja masala 1 tbsp
Turmeric powder 1/4 tsp
Amchur powder 1/4 tsp
Fresh coriander leaves 2 tbsp
Oil for frying

For bhaja masala:
Fennel seeds 1 tsp
Black pepper corn 1/2 tsp
cinnamon 2 small sticks
cardamom 4 pods,
clove 5-6
coriander seeds 1 tbsp,
and cumin seeds 1 tbsp

For Mint Dip:
Hung curd – 1 cup
Mint leaves – ½ cup
Coriander leaves – ½ cup
Garlic – 2 to 3 cloves
Green chilli – 1
Salt – to taste
Black pepper – ¼ tsp

For the Paneer Stuffing
Paneer – 1 cup (grated)
Salt – a pinch
Black pepper – ¼ tsp
Green chilli – 1 (finely chopped)
Coriander leaves – 1 tbsp (chopped)

Semolina for coating
