🛒 Ingredients for 1 serving
2 medium eggs
1 tbsp skimmed milk
1 whole wheat tortilla wrap
40g cooked chicken breast, diced or shredded
6-8 cherry tomatoes, halved (about 50g)
25g reduced-fat cheddar cheese, grated
Large handful of fresh spinach (about 30g)
Cooking spray (1-2 sprays)
Salt and pepper to taste
Optional: 5g of harissa, chipotle paste or hot sauce (add 15-20 cals)

👩‍🍳 Method: 
Whisk together eggs, milk, salt, and pepper until well combined. Spray a non stick frying pan with 0-cal spray and pour in the egg mixture, swirl to cover the base of the pan.

Place the wrap onto the wet egg mixture and press down gently. Cook for 1 minute then flip.

Turn heat down and toast the wrap for 1 min then remove from pan. Cut one line from the centre to the edge to enable folding after adding the ingredients to each quarter.

Fold one quarter at a time and return to the pan with another spritz of cooking oil for 30-60 secs each side, pressing down gently to seal everything together.
