🍳 Shakshuka (not the authentic recipe)

Ingredients:
• 2 tbsp olive oil
• 1 large onion (thinly sliced)
• 3–4 cloves garlic (finely chopped)
• 2 large tomatoes (finely chopped) or 1 cup canned tomatoes
• 1–1.5 tbsp tomato paste
• 1 tsp cumin powder
• 1 tsp chilli powder (adjust to taste)
• Salt (to taste)
• 3–4 eggs
• Fresh coriander or parsley (optional)

Method:

1.Heat olive oil in a pan. Add sliced onions + a pinch of salt. Cook on medium until soft and slightly golden .
2.Stir in chopped garlic and cook for 30 seconds until fragrant.
3.Add chopped tomatoes + tomato paste. Cook well until it becomes thick, jammy, and oil starts separating .
4.Add cumin powder + chilli powder + salt. Mix and let it cook for another 2–3 minutes.
5.Make small spaces in the sauce and crack eggs into them.
Cover with a lid and cook on low until whites are set but yolks are still soft (or cook longer if you prefer firm yolks).
