Introduction:
Suji muffin is a very easy and simple recipe. This is eggless recipe and that too without maida or all purpose flour. This is a good breakfast or snack option. This is a very healthy and tasty recipe. Do try this recipe at home and drop a comment for me. You also can like share and subscribe.
Ingredient list
• 1 cup Suji / Semolina
• 1/2 cup Curd
• 3 tbsp Boiled corn
• Salt to taste
• 2 tbsp Red capsicum
• 2 tbsp Green capsicum
• 2 tbsp Yellow capsicum
• 1/4 tsp Italian seasoning / Mixed herbs / Oregano
• 1/2 tsp Chili flakes
• Black pepper powder
• 1/2 tsp Baking powder
• 1 tbsp Oil
• 1/2 cup Water
Method:
• Take suji into a bowl. Use raw semolina, not a roasted one.
• Add curd, salt, baking powder and mix everything well together.
• Add water and mix well to make batter.
• Add oil mixed herbs, chili flakes, black pepper powder and mix
well.
• Add boiled corns, green pepper, red pepper, yellow pepper and
mix well.
• You can use veggies of your choice.
• Preheat the oven at 180 Deg C.
• Fill the silicon molds with suji batter.
• Fill the molds up to 3/4 capacity. Do not fill them completely.
• If you don’t have silicon molds then you can use cupcake tins.
• You can use steel katoris for baking the muffins.
• You can make these muffins in pressure cooker as we bake cake
in it.
• Transfer the moulds into oven and bake on 180 Deg C for about
20-25 minutes.
• Insert a toothpick in the baked muffin.
• If it comes out clean it means that the muffins are baked.
• Take the muffins out of the molds and suji muffins are already.
• You can have these muffins as it is.
• You can serve these muffins with any dipping or sauce of your
choice.
