Mandy’s Copy Cat Low Calorie Peanut Dressing
INGREDIENTS
– 3 tbsp powdered peanut butter (PB2 or similar)
– 2 tbsp rice vinegar
– 1 tbsp low-sodium soy sauce
– 1 tbsp fresh lime juice
– 1/2 tsp toasted sesame oil
– 1 small garlic clove, minced (or 1/4 tsp garlic powder)
– 1 tsp grated ginger (optional)
– 2–4 tbsp water (to desired consistency)
– Optional: pinch of chili flakes or Sriracha
INSTRUCTIONS
1. Add all ingredients to a bowl.
2. Whisk until smooth and creamy.
3. Add water gradually until desired consistency is reached.
4. Taste and adjust:
– More vinegar for tang
– More soy sauce for salt
– More lime for brightness
