Mushroom Paneer Sandwich (310 cals, 20g protein)

Ingredients:
Serves 2 –

– 2 slices brown bread
– 1 slice low-fat cheese
– 100g low-fat paneer, crumbled
– 10 medium mushrooms, chopped
– 1 small onion, chopped
– 5 garlic cloves, minced
– 1 tsp ghee
– 1/2 tbsp tomato ketchup
– 1/2 tbsp soya sauce
– Black pepper, to taste
– Salt, to taste
– Coriander leaves, for garnish

Instructions:

1. Sauté Aromatics:
– Heat ghee in a pan and sauté garlic and onion until they become golden brown.

2. Cook the Filling:
– Add mushrooms, paneer, tomato ketchup, and soya sauce. Season with salt and black pepper, and cook until the mushrooms soften and absorb the flavors.

3. Add Fresh Herbs:
– Once the filling is cooked, stir in coriander leaves for a fresh, zesty flavor.

4. Prepare the Bread:
– Heat a pan with a little ghee and toast the brown bread slices on both sides until crispy.

5. Assemble the Sandwich:
– Spread the mushroom-paneer mixture on one slice of bread, top with cheese, and cover with the second slice of bread.

6. Final Toast:
– Toast the assembled sandwich in the pan on both sides until the bread is golden and the cheese is melted.

7. Serve:
– Slice the sandwich in half and enjoy this delicious high-protein meal!
