From moong dal dosa to pistachio overnight oats, a quick egg mix, and cottage cheese scones — these are all easy to put together and great for everyday mornings.

Moong Dal Dosa
Ingredients:
1 cup moong daal (soaked for 2-4 hours)
Curry leaves
2 inch ginger
2 green chillies
1/2 tsp cumin seeds
Salt
Ghee
Pistachio Overnight Oats
1 cup rolled oats
2/3 cup pistachios
1/3 cup protein powder
1 cup cottage cheese
2 tbsp honey
1/2 tsp vanilla extract
1 1/2 cup milk
1/2 cup chia seeds

A few notes:
• For the overnight oats: If you don’t have cottage cheese, you can use paneer. Just blend it with a little milk so it becomes smooth and mixes in well.
• For the scones: You can use paneer instead of cottage cheese — just crumble it very well. If it feels a bit dry, mix in a little milk to soften it slightly (don’t blend).
• For the egg mix: You can also use it as a filling for a wrap or sandwich.
