Ingredients:
Leftover steak (any cut you love), sliced
1 cup cherry tomatoes
1 can cannellini beans, drained + rinsed
1 avocado
½ red onion, finely diced
½ cup roasted red peppers, chopped
¼–½ cup Greek pepperoncini, sliced

Dressing:
2 tbsp grainy Dijon mustard
1 tbsp maple syrup
3 tbsp vinegar
⅓ cup olive oil
½–1 cup fresh basil (packed)
Salt + pepper to taste

Toss everything together. Let it sit for 5–10 minutes before serving. add all dressing ingredients to blender and pulse until smooth. Eat as is or with chips!
