Makes: 7 samosas | Time: ~35 mins ⏱️

🟢 Ingredients

Dough:
½ cup wheat flour
2 tbsp peanut butter
⅛ tsp ajwain (carom seeds)
⅛ tsp rock salt
3 tbsp water

Stuffing:
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp fennel seeds
½ inch ginger
1 green chilli (chopped)
1 cup boiled & mashed potatoes
2 tbsp boiled green peas
1 tsp kasuri methi
½ tsp amchur powder
¼ tsp turmeric powder
½ tsp rock salt

Sweet Imli Chutney:
½ cup jaggery powder
½ cup water
⅛ tsp black pepper powder
⅛ tsp roasted cumin powder
⅛ tsp fennel seeds
¼ cup tamarind pulp
½ tsp rock salt

🟢 Method

1. Dough: Mix flour, peanut butter, ajwain, salt. Add water and knead into soft dough. Rest 5 mins.

2. Stuffing: Crush cumin, coriander, fennel slightly. Roast 30 seconds. Add crushed ginger-chilli mix. Add potatoes, peas and spices. Mix well.

3. Chutney: Cook jaggery + water + spices for 10 mins. Add tamarind pulp, cook 2 mins. Add salt after switching off.

4. Samosa shaping: Roll dough balls into small rotis. Add stuffing in centre and seal into balls.

5. Cooking: Cook in a greased paniyaram pan on low flame, turning sides, for ~10 mins until crispy.

💡 Tip: Cooking on low flame is the secret — it makes the outer layer crisp without burning.
