Instant Healthy Ragi Uttapam
🥣 Ingredients
• 2–3 tbsp oil
• 1 tsp mustard seeds
• 1 tbsp urad dal
• Curry leaves
• 1 green chilli (finely chopped)
• 1 tsp grated ginger
• ½ cup rava (suji)
• ¾ cup ragi flour
• Pinch of hing
After cooling:
• 2 tbsp roasted chana flour
• ½ cup grated lauki (bottle gourd)
• ½ cup curd
• ½ cup chopped methi / palak
• ½ cup grated paneer
• ¼ cup rice flour
• ¾–1 cup water (adjust)
• Salt to taste
👩🍳 Method
1️⃣ Heat oil in a pan
2️⃣ Add mustard seeds, let them splutter
3️⃣ Add urad dal, roast on low till golden
4️⃣ Add curry leaves, green chilli & ginger – sauté
5️⃣ Add rava, roast for 1–2 minutes
6️⃣ Add ragi flour, roast on low flame for 2-3 minutes till raw smell goes (don’t over roast)
7️⃣ Add hing, mix & cool completely
👉 Transfer mixture to a bowl
8️⃣ Add roasted chana flour, grated lauki, curd, greens & paneer, rice flour
9️⃣ Add water gradually and mix to make thick uttapam batter
🔟 Rest the batter for 15 minutes
After resting, if batter thickens, add 1–2 tbsp water and adjust the consistency
🔥 Heat tawa, spread batter like uttapam
✨ Drizzle little oil, cook both sides till golden
Serve hot with peanut/ coconut/ green chutney and curd😍
