🛒 Ingredients:
For the salmon:
2 salmon fillets (skin removed, cut into cubes)
1 tsp all-purpose seasoning
1 tsp jerk seasoning
½ tsp Cajun
Black pepper to taste
Olive oil
For the soy-pickled veg:
½ cucumber (sliced)
1 carrot (ribboned or shredded)
1 tbsp rice wine vinegar
1 tsp dark soy sauce
½ tsp Aromat seasoning
1 clove garlic (minced)
Black pepper to taste
Extras:
Cooked rice (white, jasmine or coconut rice works best)
½ avocado (sliced)
Spring onion & sesame seeds for garnish
🔥 Method:
1️⃣ Slice the cucumber and carrot thin, then season with rice wine vinegar, dark soy, minced garlic, Aromat & black pepper. Toss together and leave to marinate – this gives you that light, tangy crunch.
2️⃣ Cut salmon into cubes, season with all-purpose, jerk, Cajun, black pepper and a drizzle of olive oil. Let it sit for a few minutes to absorb everything.
3️⃣ Heat a pan, sear the salmon until golden on each side and just cooked through -keep that outside crisp and the middle soft.
4️⃣ Plate up with rice at the base, top with salmon cubes, the soy-pickled veggies, sliced avocado, and finish with spring onion & sesame seeds.
