🐝 Nourishing Traditions Lemon Mousse Directions:

Ingredients:

* 6 eggs yolks, room temperature
* 1/2 cup raw honey
* Grated rind of 2 lemons
* Strained juice of 2 lemons
* 6 eggs whites, room temperature
* Pinch of sea salt
* 1/2 cup heavy cream, preferably raw, not ultra pasteurized, chilled

Instructions:

1. Put egg yolks, honey, lemon rind, and lemon juice in the top of a double boiler.
2. Bring water to a simmer.
3. Whisk constantly for 1o minutes until mixture thickens.
4. Remove from heat and chill in refrigerator for about 30 minutes.
5. Beat cream until stiff.
6. In another bowl, beat egg whites with sea salt until stiff.
7. Fold lemon mixture into cream and then egg whites into cream mixture.
8. Spoon into individual parfait glasses and chill before serving.
