This Sheet Pan Chicken Meatballs and Veggies recipe makes balanced eating simple and efficient. Lean chicken meatballs pair with roasted vegetables and a creamy mint yogurt dressing for a flavorful, protein-rich meal. It’s perfect for busy weeknights, meal prep, or feeding the whole family with minimal cleanup.

Ingredients:

For the Meatballs:

2 cups grated zucchini (~1 large)
1 large egg
1.5 cup whole wheat panko breadcrumbs
1 Tbsp olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried parsley
1/4 tsp dried thyme
1/4 tsp dried oregano
2 cloves garlic, minced
1/2 tsp kosher salt
1/4 tsp black pepper
1 lb ground chicken

For the Vegetables:

1 yellow bell pepper, sliced into strips
1 red bell pepper, sliced into strips
1 red onion, cut into wedges
1 tsp olive oil
1/4 tsp garlic powder
1/4 tsp black pepper
Optional: 1/4 tsp dried parsley and oregano

For the Mint Yogurt Dressing (optional):

3/4 cup non-fat plain Greek yogurt
1 small garlic clove, grated
Salt & pepper, to taste
1 Tbsp chopped fresh mint
2 big pinches ground cumin
2 big pinches salt
1–2 Tbsp water

Instructions:

1️⃣ Grate the zucchini into a bowl, sprinkle lightly with salt, and leave to sit for 5–10 minutes to draw out excess water.
2️⃣ Set oven to 400°F. Grease 2 rimmed baking sheets lightly with 1 tsp olive oil or line with foil/baking paper and brush lightly.
3️⃣ In a large bowl, whisk together egg, 1 Tbsp olive oil, garlic powder, onion powder, dried parsley, dried thyme, dried oregano, minced garlic, salt, and pepper.
4️⃣ Squeeze out as much excess liquid from the zucchini. Add zucchini, bread crumbs, and ground chicken to the bowl with the egg mix; mix thoroughly.
5️⃣ Roll mixture into 1-inch meatballs. Place meatballs on one prepared sheet pan and spray a little olive oil on top.
6️⃣ Toss bell peppers and red onion with 1 tsp olive oil, garlic powder, pepper, and optional dried herbs onto the other sheet pan and lay out flat.
7️⃣ Bake 20–25 minutes at 400°F, until meatballs reach 165°F internally and vegetables are tender and slightly caramelized. Optionally, broil 2–3 minutes for extra browning.
8️⃣ Plate meatballs with roasted peppers and onions. Drizzle over cumin and mint yogurt dressing if desired.

For the Mint Yogurt Dressing:

1️⃣ Mix all the yogurt ingredients together. If the dressing is too thick, add a dash more water to thin it out into a thick pouring consistency.
