You might already know that my husband and I eat one beet a day—raw or baked. It supports gut health and gives a natural energy boost. This simple beet salad is one of my go-to recipes when I want something quick, fresh, and delicious.
Ingredients:
• 1 large baked beet
• 1/2 small white onion
• Fresh parsley
• Salt & pepper
• Olive oil
• Lemon
Instructions:
Bake beets at 400°F for 60–75 minutes until tender. Let cool, peel, and slice. Finely chop parsley and slice onion into thin half moons. Combine everything, season, and mix well. Let sit for 5 minutes before serving. Enjoy as a side salad or on its own.
