On this channel, ingredients are evaluated the way an attorney evaluates evidence — every ingredient, product, and swap runs through the same filter: backed by evidence, not trends, then made to work in a real kitchen. That is The Healthy Skillet Standard.
This bread recipe is being called the healthiest bread in the world. When I ran the ingredient list through the Standard the case was strong — blanched almond flour, psyllium husk powder, eggs separated and whipped to stiff peaks, butter, sea salt. No seed oils. No gums. No fillers. Clean on paper.
But the Standard does not stop at the ingredient list. It asks what those ingredients actually do — and whether the recipe accounts for their behavior before you put them in the oven. Psyllium husk has a documented interaction with aluminum-containing baking powder that most recipes do not address. One swap — aluminum-free baking powder — resolves it completely. That is The Healthy Skillet Standard applied before the oven goes on.
I made this bread with that adjustment. Then I spread it with the Method B cream cheese from last week — seasoned with everything bagel seasoning and garlic powder. Here is what the Standard found.
THE RECIPE
INGREDIENTS
1½ cups blanched almond flour — superfine only, not almond meal
¼ cup psyllium husk powder — Azure Standard used here
2 tsp aluminum-free baking powder — Azure Standard used here
¼ tsp fine sea salt
4 large eggs — separated completely
1 tbsp butter — melted
Parchment paper — mandatory, with overhang on all four sides
METHOD
Preheat oven to 350°F. Line loaf pan with parchment paper — overhang on all four sides.
Whisk dry ingredients together thoroughly. Psyllium husk clumps if not evenly distributed — a clump in the finished loaf is a dense gummy pocket no amount of baking will fix.
Separate 4 eggs completely. No yolk in the whites. Beat whites with a hand mixer until they hold a firm peak that does not fall when you lift the beater.
Mix yolks with 1 tablespoon melted butter. Add to dry ingredients and stir — it will be thick and paste-like.
Fold egg whites into the batter in three additions. Fold — do not stir. Stirring collapses the air you just built.
Transfer to lined loaf pan. Bake for 35 minutes. Do not open the oven before 30 minutes.
Cool completely — minimum 30 to 45 minutes. Slicing a warm psyllium loaf collapses the interior structure. The cooling time is structural, not optional.
Approximately 2–3g net carbs per slice based on comparable almond flour psyllium husk bread recipes. Actual net carbs vary based on number of slices cut.
THE SPREAD
Method B cream cheese — A2 yogurt drained 48 hours
Everything bagel seasoning — 2 tsp per 4 oz cream cheese
Garlic powder — 1/2 tsp per 4 oz cream cheese
Fold seasoning into cream cheese gently. Spread generously on a cooled sliced loaf.

STANDARD NOTE
Conventional baking powder contains aluminum which reacts with the natural pigments in psyllium husk and can cause gray or purple discoloration. Completely harmless — but aluminum-free baking powder eliminates the variable entirely.
