Who said meal prep had to be boring? Welcome to Meal Prep Made Easy, Episode 1. Today, I’m sharing one of my favorite performance meals that’s perfect for anyone focused on a fat loss diet. This easy recipe, a sweet potato taco bowl, is a fantastic example of healthy recipes that are both delicious and support your fitness goals. It’s an ideal option for meal prep for weight loss, packed with protein and fiber, and keeps you full for longer. It’s all about making nutrition work for your routine!

👨🍳 Ingredients for full recipe (makes 4 servings)
✅ 800g – 5% lean beef mince
✅ 150g x 4 – sweet potato
✅ 2 – packs of Taco seasoning mix
// optional // 120g – jalapeños (if you like some more spice)
Pico de gallo:
✅ 640g – Tomato
✅ 240g – Red onion
✅ 40g – Spring onion
✅ 340g – Cucumber
✅ 20g – Fresh Coriander
✅ Juice of 2 Limes
➡️ Method:
* Pierce the skin of sweet potatoes with a fork and wrap individually in kitchen foil. Place into an air fryer or oven at 200℃ for 45 minutes.
* Then prepare Pico de Gallo. Chop tomatoes, red onion, cucumber and spring onion to similar sizes and place into a salad bowl. Finely chop coriander and add to the salad bowl along with the juice of two limes. Mix and season with salt and pepper to taste.
* Into a hot pan add your beef mince, allow to brown and add in your spice mix. Stir occasionally to avoid sticking at the bottom.
* When your potatoes are done let them cool before transferring to your meal prep container. Remove foil. They should be so soft you can cut them open with a knife and mash to your preferred consistency
* Once beef mince is fully cooked add to the meal prep container alongside the sweet potato.
* This meal can be enjoyed warm or cold.
* HOT // If you are going to reheat the beef and potato then place the Pico de Gallo in its own meal prep container and combine after reheating.
* COLD // If enjoying this cold then once beef and sweet potato have cooled combine the Pico de Gallo and store in the fridge.
