Quinoa kichdy
• Quinoa is native to South America, originated in Peru. Quinoa has been used by the ancient Americans since 5000 BC.
• Quinoa is a seed and not a grain.
• Quinoa is very high in protein and dietary fibre. So it’s an ideal food for the weight watchers.
• Quinoa has a very low glycemic index and so it’s a superfood for the diabetic people.
**Ingredients**
Quinoa – ½ cup
Mustard seeds – ½ tsp
Cumin seeds – ¼ tsp
Urad dal – 1 tsp
Ginger (finely chopped) – 1 inch
Curry leaves – few
Onion (finely chopped) – 1
Green chilli (chopped) – 1
Tomato – 1
French beans – ¼ cup
Carrot – ¼ cup
Sweet corn kernels – ¼ cup
Green peas – ¼ cup
Turmeric powder – ¼ tsp
Chili powder – 1 tsp
Garam masala – 1 tsp
Water – 1 to ¼ cup
Coriander leaves –

**Pre preparation**
1. Wash and set the quinoa aside.
2. Chop the onion, green chilli, ginger, carrot, beans, and tomato.

**Procedure**
1. Heat a kadai or pan in medium heat.
2. Add mustard seeds and dry roast until the seeds start to splutter.
3. Reduce the flame to low and then add cumin seeds and urad dal.
4. Dry roast them until the urad dal becomes golden and the cumin seeds give out a nice flavor.
5. Add chopped ginger, curry leaves and saute until the raw smell fades off.
6. Add the chopped onion, green chili and saute until the onions become transparent and soft.
7. Add the vegetables tomato, beans, carrot, peas, corn, one by one and mix well.
8. Add the spice powders, turmeric, red chili, garam masala and mix well with the rest of the ingredients.
9. Add the washed and drained quinoa, mix well.
10. Add water and salt. Mix well.
11. Cover and cook in low flame for 5 to 7 minutes or more.
12. Garnish with coriander leaves and serve warm.
