🥣 Healthy Lauki Chilla Recipe (Makes 6–7 Chillas)
Ingredients
* Grated bottle gourd (lauki) – 1½ cups (225 g)
* Grated carrot – ½ cup (60 g)
* Finely chopped onion – ½ cup (75 g)
* Chopped coriander leaves – ¼ cup
* Besan (gram flour) – 1 cup (100 g)
* Whole wheat flour – ½ cup (65 g)
* Fresh curd – ½ cup (120 g)
* Water – ½–¾ cup (adjust as needed)
* Ajwain – 1 tsp
* Red chilli powder – 1 tsp
* Turmeric – ½ tsp
* Garam masala – ½ tsp
* Chaat masala – 1 tsp
* Chilli flakes – ½ tsp
* Salt – 1¼ tsp (or to taste)
* Oil or ghee – 2–3 tsp for cooking
Method
1. Grate the lauki and carrot. Finely chop the onion and coriander.
2. In a large bowl, combine besan, whole wheat flour, curd, and all the spices.
3. Add the grated vegetables and coriander.
4. Gradually add water to make a smooth, medium-thick batter. Rest for 10 minutes.
5. Heat a non-stick or cast-iron tawa and lightly grease it.
6. Pour a ladleful of batter and spread gently into a medium-thick chilla.
7. Drizzle a little oil around the edges and cook on medium heat for 3–4 minutes.
8. Flip and cook the other side for 2–3 minutes until both sides are golden and crispy.
9. Serve hot with green chutney, curd, or tomato ketchup.
