Easy Breakfast Idea | Chocolate Chip Banana Breakfast Loaf

Ingredients:

3 very ripe medium bananas, about 1½ cups mashed
2 large eggs
¾ cup plain Greek yogurt
1 tablespoon maple syrup or honey (optional)
1 tablespoon olive oil
1 teaspoon vanilla extract
1½ cups plus 2 tablespoons rolled oats
1 cup whole-wheat flour or all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
⅓ cup dark chocolate chips, plus more for the top

Directions:

1. Preheat the oven to 350°F. Line a 9-by-5-inch loaf pan with parchment paper and lightly grease it.
2. Blend the rolled oats until they resemble a fine flour.
3. Mash the bananas in a large bowl.
4. Whisk in the eggs, Greek yogurt, maple syrup, olive oil and vanilla.
5. Add the blended oats, flour, baking powder, baking soda, cinnamon and salt.
6. Fold everything together just until combined, then fold in the chocolate chips.
7. Transfer the batter to the loaf pan and add a few extra chocolate chips on top.
8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out without wet batter.
9. Cool in the pan for 15 minutes, then transfer to a cooling rack. Let it cool completely before slicing.

Store it in the refrigerator for up to five days, or freeze individual slices for busy mornings.
