Today Stephanie pulled the leftover card and brought last night’s dinner for lunch. In about 30 minutes she whipped up this delicious gourmet chickpea pasta! Alane needed some comfort food so she made BurgerFit burgers using Veggies Made Great frittata. She paired it with pickles on the side, of course!

Gourmet Chickpea pasta:
Ingredients:
-1 box Banza chickpea pasta
-1 can diced tomatoes
-1 onion, diced
-1 lb ground beef
-1 tablespoon Italian seasoning
-1 tsp garlic powder
-1 tsp salt
-Broccoli cheddar veggie cake from Veggies Made Great

Instructions:
-Cook the chickpea pasta according to package instructions
-Sautee the onion and ground beef. Once cooked, add the can of diced tomatoes and cook until thoroughly heated.
-Add Italian seasoning, salt and garlic
-Once pasta is cooked and drained, add the sauce to the noodles
-Pair with the broccoli cheddar veggie cake from Veggies Made Great

Ingredients:
-Your favorite BurgerFit burger
-Veggies Made Great Veggie cake or frittata
-Koops’ Mustard
-Pickles
-Cut the Veggies Made Great veggie cake in half horizontally and assemble just like you would a burger using the VMG as a bun!
