With a lot less grocery outings and a lot more cooking happening right now, I wanted to share a freaking delicious recipe that can be repurposed with a few ingredient swaps to create 6 or more different lunch/dinner ideas!
Recipe (serves 2-3):
-1 can garbanzo beans (alt: 1lb minced meat/meat alternative, 1 can black beans, 1-2 sweet potatoes)
-1 pepper
-2 shallots, 1/3 sliced + 2/3 chopped (alt: red or white onion)
-1 tomato, diced
-1-2 tbsp cilantro, chopped
-1 lime, zested and quartered
-shredded cheese of your choice
-2 tbsp sour cream (alt: Greek yogurt)
-olive oil
-2 tbsp white wine vinegar
-1 tsp sugar
-2 tbsp tomato paste
-1/4 cup water
– (optional) 1 packet of stock concentrate
-spices: salt, pepper, cumin, chili powder or paprika, garlic powder
-tortillas or rice
Notes for alternative ingredients:
If cooking minced meat/meat alternative, allow to brown before adding spices and cook through before removing from heat. If cooking sweet potato, peel and dice. Toss with olive oil and spices in a bowl before transferring to a baking sheet and bake in oven for 25-30 minutes at 425°F. If doing a bowl, start cooking rice or grain of choice right away as this recipe is quick to cook!
