Nutritional Information per Mini Loaf (1/4 of a regular loaf size)
985kcal, 6g carbs (16g fibre), 95g fat, 21g protein
If making a mini loaf: bake at 180c / 350f for 30 minutes, then cover with aluminium fol and bake for a further 20 minutes. Leave to cool down before extracting and cutting slices
If making a full size loaf: bake at 180c / 350f for 30 minutes, then cover with aluminium foil and bake for a further hour. leave to cool down before extracting and cutting in slices
INGREDIENTS
FOR FULL SIZE LOAF multiply x4 except where stated
35g / 1.25oz almond grounds / meal (reaaaly fine, if necessary blitz it in the blender)
20g / 0.7oz golden flaxseed meal (same as above)
8g / 0.28oz psyllium husk powder (same as above, better round down than up, this applies if making full size as well so rather than 32g consider using 30g or even 28g)
1 teaspoons baking powder
50g / 1.76oz coconut oil
20g / 0.7oz walnuts / pecans
20g / 0.7oz sukrin gold
1/4 tsp nutmeg
1/4 tsp cinnamon
1 tbsp lemon juice
50g / 1.76oz grated zucchini (press away as much water as possible with a kitchen towel then weight)
1 egg
