INGREDIENTS:
Spinach………………..2 bunch
Paneer………………….200gm (diced)
Onion……………………2 finely chopped
Chilli powder………….1/2 tsp
Coriander powder-….1/2 tsp
Salt to taste
Garlic………………………5-6 cloves
Ginger……………………..1 inch
Coriander leaves- optional
Lemon ……………………1
Chickpea flour………….2 tbs (Besan/ Cornflour)
Oil ………………………….2 tbs
Sugar………………………1 tbs
Green Chilli………………1

METHOD:
1. Wash Palak and cut it into big pieces.
2. Put it in boiling water for 2-3 min. Add one tbs of sugar in it.
3. Now drain the Palak and either put it in cold water or wash under running water.
4. Put Palak in a mixer- grinder, adding 5-6 garlic cloves, one inch of ginger 2-3 green chillies and some coriander leaves if you have. Grind to a paste.
5. Put 2 tabs oil in the kadhai/ wok. Let the oil heat up.
6. Add chopped onions and fry till soft.
7. Now add salt, red chilli powder and coriander powder.
8. Add ground Palak and bring it to boil. Add little water if thick.
9. Now make a paste of 2tsp besan/ cornflour and water.
10. Add it to Palak gravy and stir. No lumps should be formed. The gravy will thicken.
11. Add paneer pieces. Towards the end add lemon juice.
It’s ready to serve.
