Hello everyone!! In this video I’m happy to share with you one of my favorite salads. This Quinoa Salad is very easy to toss together, it’s perfect for a healthy lunch and it can be easily packed for a picnic. This vegetarian quinoa salad is a great source of fiber, vitamin, and high protein. What I love about this salad is that it gives me a boost of energy and keeps me satisfied!

Full Recipe:

-Ingredients I used in this recipe:

1 cup uncooked quinoa (white)
2 cups of water
6 mini sweet peppers
2 mini cucumbers
1/2 cup cherry tomatoes
1/2 of a red onion
1/2 raisins
Fresh cilantro (I use 4 leaves)

-Ingredients to make a Simple Lemon Honey Dressing

2 lemons
1 teaspoon of salt
1/3 teaspoon of black pepper
1 teaspoon of olive oil
