Watch my What I Eat in a Day at the BEACH 🙂 Although Summer’s are short here in Canada, we’ve been having a beautifully hot and sunny one this year! I thought today I would take you out of my kitchen and show you what I eat in a day at the beach style and it gave me an excuse to film and be outside haha.

Veggie Tuna Salad:
2 cans of tuna, salmon or skip jack
2-3 leafs of kale (de-stemmed and chopped)
2 ribs of celery sliced
2 medium carrots chopped
1/4 red onion chopped
1 green onion chopped
2 dill pickles chopped
2-4 tbsp of mayonnaise ( I used vegenasie)
1/2 lemon juiced
1/2 tbsp grainy dijon mustard
1/4 tsp smoked paprika
salt and pepper to taste
*Mix everything up in a large bowl and store in an airtight container in the fridge until ready to eat. It will last up to 3 days refrigerated.
