BREAKFASTS:
BANANA PANCAKES:
1 banana
1 egg
½ cup of almond meal
Dash of coconut milk (or milk of choice)
Cinnamon (adjust to your taste)
Teaspoon of coconut oil
1 tablespoon Cacao powder
1 tablespoon Maca powder
Steps:
1. Mash up banana in a bowl, along with the egg
2. Add the dry ingredients into the bowl and stir until all is combined
3. Add in the coconut milk, add as much as you like depending on the consistency you like
4. Heat up on medium/high
5. In frying pan and add a tablespoon + more (depending on what size you like your pancakes
6. Cook for 2-3 minutes on each side
7. Finally add the topping you prefer and enjoy
BERRY BANG SMOOTHIE:
– Frozen or fresh banana
– Handful of strawberries
– Handful of blueberries
– 1x tablespoon of maca powder
– 1x tablespoon of cacao powder
– Coconut water (as much as desired)
– Optional to add other powders
Steps:
1. Steps are fairly simple just add everything into the blender and blend for 1 minute or longer depending on you blender
2. Add topping you like if not just enjoy simply on its own
TOFU SCRAMBLE:
– Firm or soft tofu
– Turmeric powder
– Curry powder
– Salt and pepper
– 6 Cherry tomatoes
– Handful of spinach
– bread
Steps:
1. Crumble up tofu using your hands
2. Add in salt, pepper, curry and turmeric powder and mix until combined
3. Heat up a frying pan and add the tofu, cherry tomatoes and the spinach and cook till spinach has wilted and cherry tomatoes are soft
4. Whilst these are cooking in the pan put some bread of your choice in the toaster to cook
5. Take bread out of the toaster and butter (optional) and plate everything up
6. Enjoy
7. P.s your teeth and tongue may turn yellow ahaha
CHIA PUDDING:
– 1/4 of a cup of chia seeds
– 1 cup of coconut milk (or milk of your choice)
– 1/2 teaspoon of cinnamon
– Small handful of blueberries
– Dash of vanilla extract
– 2 teaspoons of maple syrup (depending on how much of a sweet tooth you are)
Steps:
1. A nice simple breakfast you can make on your way or even the night before
2. Add all dry ingredients into a jar or container and give a little mix around
3. Then add wet ingredients plus blueberries and stir till everything is combined
4. You can even add cacao powder or a mash banana to add a different type of flavour
5. Enjoy x
