Learn how to make these healthy and delicious Almond Whole Wheat Flour and Sattu (Roasted Gram Flour) cookies. These cookies are super healthy with No Refined Flour, No Refined Sugar, No Egg, No Butter, and taste amazing! You need to try it to believe how tasty these cookies are!
Ingredients:
Almond flour – 3/4 cup | 90 grams | 3 oz
WWF – 1/4 cup | 40 grams | 1.4 oz
Roasted Gram Flour (Sattu) – 1/4 cup | 30 grams | ~ 1 oz
Ghee – 1/4 cup + 2 tbsp | 70 grams | 2.5 oz
Jaggery (Gur) – 1/4 cup | 50 grams | 1.7 oz
Almonds (Roughly Chopped) – ~ 1 tbsp
Baking Soda – 1/4 tsp
Baking Powder – 1/2 tsp
Milk ~ 1-2 tbsp
Method:
In a bowl add Almond Flour, WWF, Roasted Gram Flour (Sattu), Baking powder, Baking soda. Mix it well and keep it aside.
In a separate bowl add Ghee and Jaggery, whisk it till this mixture becomes light, smooth and airy. That will take around 5-6 minutes.
Now to the wet mixture add the dry ingredients. Very gently incorporate the ghee mixture into the flour. Once it is well mixed add 1 tbsp of milk. If need be add another 1/2 -1 tbsp of milk and try and get the dough together.
Once it comes together, start shaping the cookies, and place it in a baking tray. Garnish it with chopped almonds. (Optional) Once all the cookies are shaped ready, pop them in the freezer for 10 minutes. Preheat the oven at 360 F or 180 C. On the Gas Stove place a heavy bottom vessel, add 1 1/2 cup of salt, place a trivet/stand or a stainless steel bowl and cover it with a lid, and preheat it for 10 minutes. Once the oven and the vessel on the gas stove are preheated place the called cooking in them for 15 minutes. Once the cookies start to turn golden brown from the base, take them out and let them rest for 2-3 minutes. After that transfer the cookies on a cooling rack. Please note the cookies will be soft initially but as they cool down they firm up.
