Tomato Basil Soup Recipe

Ingredients

Tomatoes – 4-5 medium
Basil- 10-12 leaves (can be adjusted)
Onions- one small
Ginger- 1inch pc
Garlic- 7-8 cloves
Butter – 1tbsp
Flour- 1tbsp
sugar -1 tsp (can be adjusted)
salt- as per taste
black pepper powder- 1tsp
Water -500ml (approx)

Method
•In a pressure cooker, add tomatoes, onions, ginger, garlic and water and cook until 2 whistles.
•Once this mixture cools down a little, blend well and strain.
In a pan, add butter and flour.
•Roast flour for approximately 2-3 minutes.
•Stop roasting before the flour turns brown.
•Add the blended tomato mixture.
•Stir continuously to avoid lumps.
•Boil and cook until soup thickens as desired.
•Top with butter and basil leaves and serve.
