The golden zucchini patties are healthy, gluten-free and make the perfect side dish or appetizer for your guests. They are also great for meal prep.

GARLIC YOGURT SAUCE

1 cup organic plain yogurt
1 garlic clove (pressed)
½ tsp sea salt
fresh cracked black pepper
1 tbsp fresh dill, chopped

ZUCCHINI FRITTERS RECIPE

1.5 lbs zucchini (24oz)
1 tsp salt (to sprinkle over zucchini)
2 large eggs (beaten)
½ cup green onion
¼ cup fresh dill
¼ cup fresh parsley
1 garlic clove (optional)
½ cup gluten-free flour (or ¼ cup coconut, almond flour)
1 tsp baking powder
½ tsp salt
fresh cracked black pepper
2 TBSP oil to saute

Grate zucchini and sprinkle it with 1 tsp of salt. Let it sit for 20 minutes. Drain and squeeze out all the liquid using a cheesecloth or a clean kitchen towel. Add the rest of the ingredients (except oil) and stir gently without overmixing. Heat up a skillet over med-high heat and add in 2 tbsp of oil. Using an ice cream or a cookie scoop, add zucchini into the skillet and press gently to flatten. Cook on each side for about 3-4 minute until golden brown. Serve with the garlic yogurt sauce and garnish with scallion.
