This baked oats recipe serves two although you might not want to share it with anyone else.
I suggest cutting it in half and enjoying it the following day as it tastes just as good hot or cold.

Black forest baked oats recipe (serves 2)
Ingredients:
– 100g (1 cup) oats
– 4 tbsp low-fat plain, vanilla or cherry yoghurt
– 2 handfuls frozen pitted dark cherries
– 1 tsp baking powder
– 1 tbsp cocoa powder or drinking chocolate
– 8 tbsp boiling water
– 2 tbsp powdered sweetener/ sugar or maple syrup

Method:
1. Pre-heat your oven to 200C/ 400F/ gas mark 6.
2. Put boiling water and oats in a bowl and stir with a spoon to combine.
3. Leave aside for five minutes to thicken.
4. Add all of the other ingredients into the bowl and stir with a spoon to combine.
5. Pour the mixture into a shallow oven-proof dish lined with baking paper/parchment.
6. Bake in the oven for 30 minutes. It should be crisp on the outside and soft, but not gooey, in the middle. Oven times do vary so check on it after 25 minutes.
7. Serve on its own or with additional yoghurt, syrup or fruit. It can be eaten straight away or the following day cold or warmed up.
