2 cups Chickpeas (soaked over night) OR 2 cans reduced-sodium chickpeas (15-ounce cans), rinsed and drained
1 cup Cucumber, diced
1 medium Red bell pepper, diced
2 cups Cherry tomatoes, halved
1/4 cup Red onion, finely chopped
4 oz Feta cheese, crumbled (for Vegan, use vegan feta cheese)
2 tbsp Fresh Parsley, finely chopped
Cider Vinaigrette dressing:
1/3 cup Olive oil
1/4 cup Apple cider vinegar
1 tbsp Maple syrup OR Honey
1/2 tsp Dijon mustard
1/4 tsp Garlic powder OR 1 clove Minced Garlic
Salt and Pepper, to taste
