Watermelon, Feta & Arugula Salad
Salad bowls for brunch are definitely synonymous with crunchy watermelon paired with crumbly feta cheese. Drizzled with some EV olive oil and topped with micro greens, the ingredients come together like the cast of F.R.I.E.N.D.S.
This Watermelon Feta Arugula salad is the perfect fresh, light salad for a bruncheon wonder . It takes only 5 minutes to make and has the perfect balance of salty and sweet from the feta cheese, watermelon cubes and my twisted take on a vinaigrette.
If you’re a watermelon sucker — like me — or if you need additional ways to use up the leftover watermelon half in your fridge try some fresh homemade watermelon juice or watermelon feta skewers! Sorry I do that too….
This recipe is a keeper because it’s such a fun, creative way of combining my two favorite summer dishes: fresh watermelon & salad! Instead of bringing a traditional lettuce salad to your next brunch, bring this watermelon feta arugula salad — the meat doesn’t have to be the only mouth-watering item on the table!
This salad recipe takes just 5 minutes to make — nothing can beat that eh !!!
