A quesadilla is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes meats, beans, vegetables, and spices, and then cooked on a griddle.

For the filling for the quesadilla, heat 1 tablespoon olive oil, add chopped chillies (optional), add finely chopped onion, coriander or cilantro leaves, add chopped vegetables ( I used green tomatoes, zucchini and bell peppers), sauté and add 1/2 tsp salt, 1 tsp turmeric (optional), 1 tbsp Taco seasoning. Mix well, cover it and cook for 5 minutes. Our filling is ready.
You can make the quesadilla on a pan or on a quesadilla maker. I am going to use the griddle option of my panini maker this time. Place one tortilla on the plate of the panini maker, spread some taco bell sauce, add little grated cheese, spread the filling, little cheese, put another tortilla on top and close the panini maker gently. I used the griddle option in the medium heat.Cook for 2-3 minutes and cut it into wedges. Serve hot with salsa or Guacamole (recipe # 35). I used whole wheat tortillas, you can use leftover chapathy (Roti) or nan. You can make quesadilla using a single tortilla. Put the cheese and filling on half of the tortillas, fold it and cook. Now let us see how we can make this using a pan. This is a very quick, easy healthy dinner choice even when we travel.
Heat the pan, spread little oil, place tortilla, spread sauce (any hot sauce or taco-bell sauce), spread grated cheese, add finely chopped vegetables (I used onion, bell-peppers (capsicum), zucchini), sprinkle finely chopped cilantro or coriander leaves & very little salt. Sprinkle grated cheese and add little sauce. Cover it with another tortilla. Press it and cook it and flip it over using a plate.
