This Vegan Cashew Tofu Stir Fry is filled with whole food ingredients, and is simply delicious. It is a recipe that is very quick and requires minimal ingredients. It can become a staple recipe for when you are in a rush but want to fuel with whole food ingredients.
My key tip for living a healthy lifestyle is to start by including ingredients that are whole in nature. This means, foods that are the closest to nature as possible. When we do this, it allows us to feel when we are full and our bodies will respond really well to a whole foods diet.
Cashew Tofu Stir Fry(use whatever protein that you enjoy)
Ingredients:
1/2 cup of cashews
Tofu cut into bite sized pieces
1 small onion sliced
1 large carrot thinly sliced
1 red pepper thinly sliced
1 bunch of bok choy
Sauce ingredients:
2 tbsp of soy sauce
3 tsp of brown sugar
1 clove of garlic minced
1 tsp of corn starch
1/4 cup of water
Method:
1. Mix your sauce ingredients in a small bowl and set aside.
2. In a skillet add a touch of oil and toss in your cashews, roast for a couple of minutes.
3. Toss in your onion and stir fry for a few minutes and then add in your tofu, pepper, carrot, bok choy.
4. Add in a touch of water and then add in your sauce. Stir fry to thicken.
*Pair this dish with a cup of brown rice and some sesame seeds.
