This Chickpeas FATTEH SALAD is a Middle Eastern classic and is completely vegetarian! It’s one of my favorite recipes to serve because it’s so easy to put together and the flavor combinations are SO good. You get the crunch from the pita, the garlic-y and lemony yogurt tahini sauce, and a burst of flavor from the garnish. It can’t get any better! I’m warning you – this dish is addictive. You’ll be making it over and over again.

INGREDIENTS:
1/2 CUP BOILED CHICKPEAS
1 PITA BREAD

FOR SAUCE:
250 GRAMS YOGURT
1 TSP SALT
1.5 TBSP LEMON JUICE
1/2 TSP BLACK PEPPER
1 TSP CRUSHED GARLIC PASTE
2 TBSP MAYONNAISE
1 TSP TAHINI PASTE
2 TBSP OLIVE OIL
2 TBSP MILK

FOR GARNISH:
1 TBSP POMEGRANATE
1 TBSP PINE NUTS (IF AVAILABLE)
1.5 TBSP CHOPPED CORIANDER LEAVES
2 TBSP CHOPPED TOMATOES
2 TBSP BOILED CORNS
2 TBSP CHOPPED CAPSICUM
2 TBSP CHOPPED SPRING ONION
