Chettinad Soya Kheema Recipe:
Soya Chunks – 1 ½ Cup
Hot Water – As Needed
For the Masala:
Coriander Seeds – 2 tsp
Cumin Seeds – 1 tsp
Black Peppercorn – 1 tsp
Green Cardamom – 1 no
Dry Red Chilli – 5 nos
Other Ingredients:
Gold Winner Oil – 3 tbsp
Fennel Seeds – 1 tsp
Stone Flower / Kalpasi – 1 no
Cloves – 3 nos
Bay Leaves – 1 no
Cinnamon – 1 inch
Green Cardamom – 1 no
Curry Leaves – 2 Sprigs
Onion (finely chopped) – 1 ½ Cups + For Garnish
Green Chilli (slit) – 2 nos
Ginger Garlic Paste – 1 tbsp
Turmeric Powder – ¼ tsp
Tomato (finely chopped) – ½ Cup
Rock Salt – 1 ½ tsp
Water – 1 Cup
Milk – ½ Cup
Coriander Leaves (finely chopped) – ¼ Cup + For Garnish
Lemon Juice – 1 tbsp (for serving)
Cooking Instructions:
1. Soak the soya in hot water. Cover and rest for 10 minutes.
2. Strain the soya and pulse blend it lightly in a mixie to just mince it.
3. For the masala, dry roast the coriander seeds, cumin seeds, and black peppercorn on medium-low heat, until they turn aromatic.
4. Add the green cardamom and dry red chillies. Continue to roast them until the chilli turns crisp.
5. Allow it to cool, then grind into a fine powder.
6. Heat oil in a pan and add the whole spices, onion, curry leaves, and green chillies. Saute until the onion just starts to turn golden brown.
7. Add the ginger garlic paste and saute for 1-2 minutes or until the raw smell disappears.
8. Add the tomato, turmeric powder, and salt. Saute for 2 minutes.
9. Add the soya mince and mix. Add water, cover, and cook on medium heat for 5 minutes.
10. Add milk, cover, and cook for 4 minutes.
11. Open and cook for 2 minutes, or until the oil floats on top and you have reached the required consistency.
12. Mix in lemon juice and coriander leaves.
13. Garnish with chopped onions and coriander leaves. Serve with parotta, puri, idly, idiyappam or rice.
