A delicious afternoon snack to get you through the 3pm energy slump! These biscuits freeze well and will last about a week in an airtight container. Best enjoyed with a nice cup of tea – they are very dense!

Ingredients:
1 ½ cups wholemeal flour
2 generous sprinkles of cinnamon
1 generous sprinkle of salt
1 carrot, grated
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1/2 cup walnuts, chopped roughly
1 egg
1/4 cup olive oil
small handful of mixed seeds (eg. Pepitas, sunflower seeds, chia seeds)
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup desiccated coconut
