Creamy Sweet Potato Soup:
Thick Vanilla Smoothie Bowl:
Tofu Scramble Burrito / Bowl
Ingredients
• 1 cup leftover Tofu Scramble from Eating Whole
• 1/4 cup vegetable broth for sautéing veggies
• 1/2 sweet onion, diced
• 2 baby bella mushrooms, diced
• 1/2 orange bell pepper, diced
• Salsa or chopped tomato and cilantro
• Hot sauce of choice
• Mixed greens of choice
• Desired amount of tortillas (if doing the burrito option)
1. In a small frying pan heat up the vegetable broth for sautéing, then throw in the mushrooms, onion, and bell pepper. Stir occasionally for 3 to 5 minutes until softened.
2. Warm up the leftover Tofu Scramble while the veggies are sautéing.
Burrito Option:
Warm tortillas, then assemble with your desired amounts of Tofu Scramble, sautéed veggies, mixed greens, salsa/tomatoes and cilantro, and hot sauce. Roll up and enjoy!
Bowl Option:
In a large bowl place a bed of mixed greens down, add your desired amounts of Tofu Scramble, sautéed veggies, mixed greens, salsa/tomatoes and cilantro, and hot sauce. Enjoy!
Lemon Maple Tahini Dressing
Ingredients
• 1 tbsp tahini
• Juice of one lemon, or more to taste
• 1 tsp maple syrup
• 1 garlic clove, crushed
• 2 to 3 tbsp water to thin
• Salt and freshly cracked pepper to taste
1. Place all ingredients into a jar with lid and shake to combine. Taste and adjust seasoning to your desired taste.
