Today I’m going to show you how to make a very tasty apple healthy marshmallow! It differs from the classic marshmallow in that it can be prepared both with a light degree of sweetness and very sweet. The non-sweet option allows you to enjoy the taste of the fruit that underlies it. This is my first marshmallow recipe on the channel: apple, as the easiest. If you like this idea, like it and I will continue to shoot recipes for other types of marshmallows.
This low-calorie dessert is a great meal for people who are choosing a healthy food, but like to eat something tasty!

Macros per 100 g: Calories 68.9, Proteins 2.4, Fats 0.3, Carbs 17.7
Weight 200 g
Sweetener: 1 gram of my intense sweetener is equivalent to 10 grams of sugar.

Apples 190 g – liquid apple puree 120 g

Ingredients for the protein part:
Applesauce (liquid) 80 g
Erythritol 20 g
Albumin (dry egg white) 5 g

Erythritol should completely dissolve in the puree (either grind it into powder first, or mix it thoroughly, you can help dissolve by heating the mass) – take this moment carefully.

Syrup Ingredients:
Erythritol 45 g
Isomalt 20 g
Sweetener 5 g (optional)
Agar-agar (900) 4 g
Water 40 g
Applesauce 30 g

With these proportions, the marshmallow turns out amazing, but after 2 days it may begin to be slightly sugared due to the abundance of erythritol. If you plan to store marshmallows longer, or give them away, then take other proportions for syrup: 35 grams of erythritol and 50 grams of isomalt.

When using crude protein, the protein portion will be different:
Applesauce (thick) 50 g (80 grams of liquid puree boil until thick)
Egg white 35 g
Erythritol 20 g
