These date balls are an altered version of the recipe from Cook & Enjoy by S.J.A de Villiers
Ingredients:
250g salted butter
500g dates
1 egg
1/4tsp salt
250g shortbread biscuits (I used scotch fingers)
Cocoa powder (optional)
Dedicated coconut (optional) [you can also use crushed nuts or other toppings]
Method:
1. Melt butter in a pot until liquid
2. Add dates into pot then stir until soft
3. Press the dates against the sides of the pot to break it down
4. Whisk the egg and salt together before adding to the date mixture
5. Crush the biscuits with a rolling pin or other material, but not too much because you still want some crunch
6. Add the crushed biscuits and cocoa powder then fold into the mixture
7. Leave to cool (take it off heat)
8. Roll balls of the mixture into coconut and place onto a tray
9. Refrigerate the date balls for 2 hours or until hard then feel free to enjoy 🙂
