Dear Abbey,

I’ve got two kids from two very different life cycles. My son is in grade eight and has a monster appetite and my daughter is in grade one. I also have to pack a lunch for my husband and I so we don’t resort to buying fast food every lunch. The work week is hectic enough so the thought of having to make multiple meals to suit everybody’s nutritional needs is legit keeping me up at night. Any ideas on how to attack this back to school beast.

Abbey has only one kid and she doesn’t have to pack his lunch yet, but Abbey can totally relate to the struggle. So Abbey has come up with an easy strategy to help you feed your kids, teens and yourself all with the same healthy ingredients. One meal, three ways.

Let’s do this,

Let’s talk about the building blocks:
Fruit and Vegetables, Grains, Dairy and Alternatives and Meat and Alternatives.

Abbey is using Nano cheese and yogurt for dairy and alternatives. Abbey is a huge fan of the Nano mozzarella cheese packs because their all natural, they come in single easy to open packages and they’re available with twenty one animal designs for kids.

The Nano yogurt is also a great snack option because it’s made with no refined sugar added, satiated whole milk and one billion probiotics.

Let’s pack some lunches.

For our littles, Abbey likes to pack all of these flavours as single foods bento box style so it’s super easy for kids to pick up and eat on their own. We’ve got baby tomatoes, diced avocados, black beans and homemade whole grain tortillas sliced into triangles and baked. For dessert, diced mango and Nano yogurt as a healthy treat. Lastly, as a snack, we’ve got Nano mozzarella cheese.

For a teen’s lunch, we need a something a little more substantial, so Abbey is making a tex mex wrap. In a whole grain wrap, add lettuce, black beans, sliced bell peppers, tomatoes and sliced avocados. Wrap tightly. Dessert is Nano’s big sister, Iogo protein yoghurt topped with mango and coconut chips.

Pack both the burrito and the Iogo yogurt parfait along with a healthy beverage for your growing teen.

Now it’s time for and adult’s lunch. Abbey tries to get in a big salad at least once a day and taco salad is always a fan favourite.

First, let’s make the dressing. To a small container, add the olive oil, lime juice and the honey. Season with a pinch of salt and give it a good shake.

To the salad, add lettuce, tomatoes, bell peppers, avocado, black beans and homemade tortilla chips. Abbey is packing the salad with the same Iogo protein yogurt parfait, the dressing and a decaf latte with two percent milk.
