Spinach Pecan Salad
-1 cup spinach
-1 cup Persian cucumber
-1 sliced mozzarella string cheese
-1/4 cup pecan nuts
-2 tbs dried raisins
-2 tsp parmesan cheese

For Dressing
-1 tbs Greek yogurt
-1 tbs lemon juice
-1 tbs extra virgin olive oil
-1 tbs honey
-2 tbs dill weed
-salt and pepper

Summer Mix Salad
-2 cups spinach
-2 cups lettuce
-1 Persian cucumber
-1 tomato
-8 black olives
-1/2 avocado
-1 tbs extra virgin olive oil
-1 tbs apple cider vinegar
-1tbs dill weed
