welcome to my first meal prep and “what i eat in a week” (during ramadan) video! sharing how i meal prep healthy, and easy meals for the week. i also share a delicious, and tasty dessert recipe to end your day after fasting. i don’t like eating the same thing daily so i meal prep a certain way so I can mix different things together depending on what i’m feeling that day. i’m also a solo mama so this helps save me lots of time and not cooking everyday. i hope that this inspires you to eat healthy and feeling your best during ramadan or any time of the year!!

ERITREAN FUL RECIEPE:

MY PROTEIN BALL RECIPE:
1 cup oat flour
1/4 cup flaxseed
1/4 cup shredded coconut
1 scoop collegen powder
1 scoop of protein powder (make sure it’s something you like)
1/4 cup nut butter (i like mixing nutzo and granola butter brand together)
1/3 cup maple syrup
1/2 cup choc chips
*mix dry ingredients and then add in the rest. mix well and roll into a ball shape.
after forming it into a ball then place it in the fridge for 3-4 days covered.

BANANA BREAD RECIPE:
(wet ingredients, mix first)
2 ripe bananas
2 pasture raised eggs
1/8 cup maple syrup
(dry ingredients, mix second)
1 cup almond flour
1/2 gluten free oats (blended)
1/4 cup coconut sugar
1 tsp baking soda
1 tsp baking powder
*after mixing the wet and dry ingredients, add half of the mix into a baking tray with parchment paper. then add in the chocolate chips, and then add the rest of the mix on top. top off with nuts or more chocolate. i used the “ritter sport” dark chocolate brand (they have them at target) on top by cutting them into square shapes. then cover and bake at 350 for 30-40 mins/until its ready. enjoy!
