Beat the heat by making these easy to make, refreshing,cool,tasty and healthy Cucumber Hung Curd Boats!Enjoy them as a salad or as a side dish to your meals.
Cucumber Hung Curd Boats are keto,gluten free apart from being delightfully crunchy,packed with the goodness of hung Curd,raw veggies of your choice,some flavoursome spices and refreshing mint and coriander leaves.You can even add boiled sweet corn, pomegranate seeds etc to suit your palate.
Cucumber Boats
Ingredients
Cucumbers-2(or as required)
Hung Curd Filling
Ingredients
Hung Curd -1/2 cup
Grated carrot -1 tbsp
Chopped green capsicum -1 tbsp
Chopped yellow capsicum -1 tbsp
Chopped red capsicum -1 tbsp
Chopped onion -1 tbsp
Chopped green chillies -1 tsp
Mint leaves -4(torn)
Fresh coriander leaves -1 tbsp
Salt to taste
Black salt -1/2 tsp
Roasted jeera powder-1 tsp
Pepper powder -1/2 tsp
Juice of half a lemon
For garnishing
Nylon Sev
Spicy chana dal
Beetroot shavings
Coriander sprigs
Chaat masala
Method
Peel the skin of the cucumbers and cut them in half.Remove the seeds and pulp with the help of a spoon.
In a bowl,add hung curd,grated carrot, chopped green, yellow and red capsicum,onion,green chillies,mint and coriander leaves, salt ,black salt, roasted jeera powder, pepper powder lemon juice.Mix all ingredients well.
Fill the Hung Curd filling into the cucumber boats.
Garnish with nylon sev,roasted spicy chana dal,beetroot shavings , coriander sprigs and lastly sprinkle some chaat masala over them.
